The explanation is easy, putting your server to run in an VPS is the same as putting it in your friend computer, you dont need to have your pc on, only your friend. And the VPS, is 99% of the times on, unless something happenes to the physicall machine or the server facilities connection. Do not worry, and turn off your computer, your server will be up and running. As for the startservice.sh is an executable for linux, that starts your services, Connector,Helper, SubHelper, etc without the need to start one by one.
